Introduction: Trust is the most important ingredient
Food crises are the nightmare of every manufacturer and hospitality business: foreign bodies in the product, contamination with salmonella or listeria, undeclared allergens or a broken cold chain lead, in a serious case, to nationwide product recalls, ruinous claims for damages and an irreparable loss of trust among consumers.
The global food chain is highly interconnected today. Raw materials come from continents around the world. All the more important, then, is a worldwide recognised, transparent standard for food safety.
The international standard ISO 22000 for food safety management systems (FSMS) combines the proven HACCP principles with the advantages of a modern management system. It secures food safety across the entire value chain – “from farm to fork”.
The difference between pure HACCP and ISO 22000
Many businesses ask: “We already work to HACCP – so why do we need ISO 22000?”
HACCP (Hazard Analysis and Critical Control Point) is a purely hazard-based control concept. It is legally required in the EU, but it does not cover business management structures.
ISO 22000 goes far beyond that:
| Aspect | Pure HACCP concept | ISO 22000 (FSMS) |
|---|
| Focus | A pure hygiene and control tool at critical checkpoints. | A holistic management system (including leadership, continuous improvement and resources). |
| Structure | An island solution in production. | Harmonized Structure (fully compatible with ISO 9001, 14001 and 27001). |
| Supply chain | Usually limited to the organisation’s own site boundaries. | Systematic monitoring of suppliers and of upstream and downstream chains. |
| International recognition | Differing national interpretations. | A standard that can be certified uniformly worldwide. |
The 4 pillars of ISO 22000
A food safety management system in line with ISO 22000 is based on four core building blocks:
1. Interactive communication
Hazards to food safety must be communicated transparently along the entire chain: upstream with suppliers, downstream with retailers and end customers, and with the official control authorities.
2. System management
The FSMS is embedded in the organisation’s general management processes (planning, control of documents, management review).
3. Prerequisite programmes (PRPs)
Basic hygienic conditions must be met: pest control, structural requirements for kitchens and production halls, personal hygiene, cleaning and disinfection, and waste disposal.
4. The HACCP principles according to the Codex Alimentarius
- Identification of all biological, chemical and physical hazards
- Determination of the critical control points (CCPs) and operational prerequisite programmes (oPRPs)
- Setting of critical limits (for example core temperatures during heating, pH values)
- Establishment of a complete monitoring system
- Definition of corrective actions when limits are exceeded
The duty of complete traceability
If contamination occurs despite every protective measure, every minute counts. ISO 22000 requires a traceability system on the “one-step-back / one-step-forward” principle:
- The organisation must be able to establish within seconds which supplier delivered a particular raw-material batch.
- It must likewise be fully traceable which finished products that batch went into, and to which wholesalers or outlets the affected batches were delivered.
- Regular recall simulations ensure that the team is able to act immediately in an emergency.
Market advantages for certified food businesses
- International trade and export: ISO 22000 is known and recognised worldwide. It opens doors to international supermarket chains and global food corporations.
- Protection against scandals that threaten survival: Structured monitoring of CCPs prevents contamination before products leave the factory gates.
- A reduced audit burden: When customers and authorities see that a certified FSMS exists, the number of time-consuming customer audits falls noticeably.
Conclusion
Food safety tolerates no compromise. With ISO 22000 you build a robust management system that protects consumers, shields your brand from reputational damage and secures market access worldwide.
